The American Food Institute (AFI) has created a new standard for the processing and distribution of packaged food. The new rules, which take effect January 1, 2014, require that foods be reheated to at least 165 degrees Fahrenheit. The new rules come in the wake of the recent controversy over a small number of products that have been reheated to over 200 degrees.

Foods, especially packaged foods, are a challenge when it comes to reheating. When you add cold water and a little sugar or salt, the food doesn’t get cooked. In fact, it can even get mushy and turn to jelly. Even worse, food products are often not safe to eat after they’ve been heated. And when it comes to cooking food, the ingredients that you use can affect the food’s quality, flavor and even shelf life.
